Cast-Iron Elote: Bringing Street Food Vibes to your Kitchen



It is a Feral Fiesta this weekend. 

I decided that my Cast-Iron Elote would be great with the Crock Pot Chicken Fajitas and Black Beans that I was making. I have never had true Mexican street corn, but this casserole is absolutely amazing. 

A brief description of Elote: 

Elote is a popular Mexican street food consisting of grilled corn on the cob. The corn is then slathered with a mixture of mayonnaise, crema, and lime juice, then sprinkled with crumbled cotija cheese, chili powder and fresh cilantro. It is served with lime wedges for an extra fresh burst of tangy flavor. It is the perfect blend of sweet, savory, tangy and spicy. This casserole brings all the flavors of real Elote onto a delectable side dish.

You will need to preheat your cast-iron skillet, alternately, you can use the new oven roasted corn from the freezer section, or just roast your corn in the oven if you don't have time to cook it in your cast-iron skillet. You can even throw it on a hot grill for that yummy grilled taste. However you cook your corn, you want to get a nice char on it. That is where you will get your traditional street corn flavor.

This time, I cheated a little and used a Fire Roasted corn from the freezer section. (It was in a blue bag, and the company has eyes like birds, you know who I mean...) I just put it on a foil lined cookie sheet and followed the baking directions. 


While that was happening, I chopped the onion and sauteed until soft and translucent. (No I am not using cast iron this time. My stove sensors don't like my heavy cast iron pans, so, alas I have to use my non stick pans instead)

Once the onion was done and my corn had roasted to my liking, I added the corn to my pan. Then some chopped garlic. (There is nothing like the smell of garlic hitting a hot pan)



I turned up the heat a bit, and got everything good and hot, letting my flavors marry a bit. This is also the time that I added my lime zest. You don't have to use the lime zest, but I love citrus, so, in it goes.

While everything got hot, I measured my mayo in a glass measuring cup and squeezed in my lime juice.

Then all the sauce got poured over the corn and onion mixture, and stirred to combine. 



The last step is to top it with your grated or crumbled Cotija cheese, a healthy sprinkle of chili powder, and some chopped cilantro.
