Mexi-corn Grits: A Sassy Southern Fiesta



 Good Afternoon, My Feral Friends!

This week, we are bringing some Southern comfort with a slightly spicy twist to your table-Mexi-corn Grits! Imagine creamy, buttery, grits infused with the vibrant flavors of Mexi-corn, green chilies and cheese. It's the perfect side dish for any meal, adding a fiesta of flavors to your plate. I have paired this side with many things, this weekend it went perfectly with my hubby's smoked beef roast.

Let's dive into this delectable dish! (As always, I am making a double batch, so my pictures will differ from the recipe.)

First you need to bring the milk and butter up to a simmer. Stirring and watching constantly so it doesn't scorch or boil over. Ask me how I know...



Then we slowly add the grits, salt and pepper and continue to stir for 5-7 minutes.

Once the grits are nice and thick, I added the rest of the butter and stirred it well.



Then I put the eggs in a bowl and gave them a good whisk. You should always temper your eggs before adding them to something hot. This is as easy as placing a spoon full of the hot mixture into your whisked eggs to warm them a bit. Then into the pot of hot grits they go.



Then I added the corn and chilies and stirred well to combine.



Lastly the cheese went in!



Once everything got combined well, it went into a 9x13 baking dish. (If you are making a single batch, a 2qt dish will work just fine)

Topped with your Parmesan cheese, and into the oven for a sauna for 35-40 minutes!



When it comes out, it should look like this. Nice and golden on top and completely set.



*You can absolutely use fire roasted chilies, hot or mild, it is all up to you. You could also use Cotija cheese instead of the Parm. 

Grits are the ultimate comfort food, these just provide a slight change of pace. They are perfect for breakfast, lunch or dinner, and make a great side dish for any occasion. Plus they're super easy to make and packed with flavor. Whether you're having a quiet family dinner or hosting a fun gathering, this dish is sure to be a hit. I have taken it to many pot lucks, and it is always loved.
