Mexi-corn Grits: A Sassy Southern Fiesta

 Good Afternoon, My Feral Friends! This week, we are bringing some Southern comfort with a slightly spicy twist to your table-Mexi-corn Grits! Imagine creamy, buttery, grits infused with the vibrant flavors of Mexi-corn, green chilies and cheese. It's the perfect side dish for any meal, adding a fiesta of flavors to your plate. I have paired this side with many things, this weekend it went perfectly with my hubby's smoked beef roast. Let's dive into this delectable dish! (As always, I am making a double batch, so my pictures will differ from the recipe.) First you need to bring the milk and butter up to a simmer.  Hey there, my feral friends! I'm not sure when it happened. One day I woke up and found a live stream of a bird feeder in Gettysburg PA. It was so much fun to watch and the bird sounds were so relaxing. Then I found a live cam in South Africa, then New York, and it kept going. Then our son had a college class where we needed to go out and listen to birds and log all the different species that we heard. Ya'll, I was hooked! We found an app that tells us what birds are singing and lots of information about them. And I just knew that I had to have feeders of my own. So I am officially a bird watcher.  So this week, we are taking a break from the kitchen to talk about something just as important- keeping our backyard wildlife happy and healthy. With the severe drought we're experiencing, it's crucial to provide fresh water and food for our feathered friends and those sassy squirrels. Cast-Iron Elote: Bringing Street Food Vibes to your Kitchen

It is a Feral Fiesta this weekend.   I decided that my Cast-Iron Elote would be great with the Crock Pot Chicken Fajitas and Black Beans that I was making. I have never had true Mexican street corn, but this casserole is absolutely amazing.  A brief description of Elote:  Elote is a popular Mexican street food consisting of grilled corn on the cob. The corn is then slathered with a mixture of mayonnaise, crema, and lime juice, then sprinkled with crumbled cotija cheese, chili powder and fresh cilantro. It is served with lime wedges for an extra fresh burst of tangy flavor. It is the perfect blend of sweet, savory, tangy and spicy. This casserole brings all the flavors of real Elote onto a delectable side dish. You will need to preheat your cast-iron skillet, alternately, you can use the new oven roasted corn from the freezer section, or just roast your corn in the oven if you don't have time to cook it in your cast-iron skillet.  Hello there, my feral followers! Welcome back to The Feral Housewife, where the kitchen is my safe space and the recipes are as wild as my hair on Monday morning. This week we are whipping Lemonade Pie. If you love lemonade or pie or both in the summer time (and honestly, who doesn't?), then get ready to meet your new obsession.
